Quick Pickled Cucumbers

Material Kitchen paring knife its my new favorite Ingredients3 packages organic baby cucumbers (you can use 2 regular size cucumbers as well but the smaller Persian style cucumbers are the best) Sliced paper thin skin on.3/4 cup water1/3 cup Rice Vinegar (or apple cider )1/3 cup sugar (optional) We like them sweet but you can omit the sugar if adding peppers and looking for a savory cucumber1-2 teaspoons JF Universal SaltIf making savory…..some great additionsadd 1/2 cup thinly sliced green onionadd thinly sliced jalapeño and red cherry peppers (this makes a great side for brisket or red meat) ProcessIn a small bowl combine water, vinegar, sugar and salt till dissolved.
